Swiss Chard are leafy greens in the beet family and have a charm all their own, not only in flavor but with their colorful edible stems of white, red, gold. The leaves can be julienned raw for a hearty salad with shaved Brussels Sprouts or sautéed along with the stems as you would spinach but resulting in a more refined and delicate flavor than that of cooked spinach. Loaded with Vitamins A. K, C, chard also has significant levels of Vitamin E when eaten in the raw form. It’s highly perishable, so buy locally-grown chard if possible.
