We grow Tuscan Kale which is also called Lacinata, dinosaur kale, or black cabbage kale, but we prefer the Italian name, Cavolo Nero, which translates to black cabbage. Although it’s not a cabbage, it’s in the same family of plants and is the traditional green used in minestrone. Its blue-green puckered leaves are superior in flavor and uses are endless- chopped raw in salads and dressed as you would Cesar salad, tossed into omelets or soups, it’s a favorite of ours.
