We grow our leeks with long white shanks, as they do in Holland, because it’s this tender part of the plant that’s edible- the long bundle of leaf sheaths. Related to onion and garlic, the flavor of leeks is more delicate and is classic in potato leek soup or vichyssoise. Leeks can be braised or eaten raw in a salad and have endless uses in soups and stocks.
