To satisfy high demand for kale, we grow three types of baby kale; baby green kale, baby Tuscan Lacinata kale (which we call cavolo nero), and a baby red kale. Additionally, we grow mature curly kale that we strip of ribs and stems, resulting in tender kale leaves with an assertive mouthfeel and taste. Kale’s complex flavor can range from rich and savory to pleasantly bitter. It tastes exceptionally healthy which is supported by its extremely nutritious content. Kale contains beta-carotene and the antioxidants lutein and zeaxanthin (associated with eye health), as well as potassium, vitamins A and C, fiber, iron and calcium.
