We love the velvety tender leaves of Butter Lettuce, and often bring a few heads in from the field for our supper. We grow both red and green butter lettuce (which is also referred to as Boston or Bibb). We market whole heads or separate the leaves and wash and pack them into retail clamshells for a ready-to-eat salad. When field-grown in mineral soils, the centers are crunchy, sweet and delicious and take care of your Vitamin A needs with very little calories. Lightly dress the leaves with olive oil and a squirt of lemon, our Citrus dressing, or a creamy yogurt or buttermilk dressing.
