Also called Chinese cabbage, Bok Choi has a light, sweet flavor, and is crunchy because of its high-water content. A serving supplies high levels of Vitamin A and C and scant calories. It’s quickly prepared when sautéed, as a stir-fry, with oil and garlic, or can shine with the addition of soy sauce, gingerroot, toasted sesame oil and served over rice or Asian noodles. It’s also a great ingredient in a mushroom soup with cubed tofu.
